Pasca in trei straturi

Strat branza :

4 oua

150 g zahar

2 plicuri zahar vanilat

3 lg faina

600 g branza de vaci grasa

100 g stafide

 

Strat smantana si cacao :

4 galbenusuri

150 g zahar pudra

1 plic zahar vanilat

500 ml smantana grasa

3 lg cacao

 

Strat nuci :

4 albusuri

4 lg zahar

10 lg nuci macinate (130 g)

 

Mod de preparare :

 Strat branza : mixam spuma ouale cu zaharul si zaharul vanilat, circa 15 minute, adaugam faina, amestecand cu o lingura, apoi branza de vaci si stafidele inmuiate in apa calda (3 ore) . Coacem acest strat in forma rotunda cu d= 28 cm , la 180 grade Celsius, circa 35-40 minute. Facem testul scobitorii. Pasca poate fi coapta si in forma cu d=26 cm, dar cu pereti mai inalti.

 Strat smantana si cacao : mixam galbenusurile cu zaharul pudra si zaharul vanilat pana isi tripleaza volumul, adaugam apoi smantana si faina amestecata cu pudra de cacao (cernute). Intindem peste primul strat scos fierbinte din cuptor si dam din nou la cuptor pentru inca 35-40 minute. Facem testul scobitorii.

 Strat nuci : mixam spuma albusurile, adaugam apoi zaharul, mixand pana se topeste si obtinem o bezea ferma si lucioasa. Adaugam nucile macinate si amestecam cu o lingura. Intindem compozitia peste stratul cu smantana copt si fierbinte. Coacem la 170 grade Celsius, circa 25-30 minute.

Lasam pasca sa se raceasca, apoi o scoatem din forma si o feliem cu un cutit ascutit.
